Well Star Wars PCBs f.i. are full of TTL and well....it's still available and used widely today.

TTL discret logic is pre 80/81 from what I know

What you are referring to is probably "TTL only" games (means: no CPU) like, i.e., Monaco GP. You are right, these became history around 80/81. But as Andre said, TTL components are still widely used in and for games up to now, just not exclusively ;)

I wonder how is the production of companies like Williams or SEGA (coin-op division) today.

Does they anything else than some shooters and racing cabinets?
I have a dream....that one day....all members of forum are the same....no matter how long ago they have joined, how many games they own or how many posts they wrote ;)
